I have DX915s, however some of the PLUs can not be reprogrammed through using the till itself, it seems they don't even exist on the PLU look up function,

could it be I need to use PLM2000 to do it? and if so where can I find the cable I would need to use

Sp122 plus should enable you to do all plu programming for all plus in the till. Plm is not needed.
