I am purchased a old restaurant and want to change the name on receipts

Is it a logo that's on the receipt or words? If it's a logo you'll need a service key.
If it's words, go to pgm2 and type in:

2614 . X 1 X (your text in here) ST

then for the second line:

2 X (your text in here) ST

and so on.
Once you're done, press TL to finish.
Depending on the service line settings you might have 6 lines for a header, or 3 line header and 3 line footer, or just a 3 line header.
