SAM4S SPS-2000 Memory Setup / DK port voltage

Hi,
Just picked up a 2nd hand SPS2000 that had been used in a retail environment with 10,000 plus PLU's etc.

I'm planning to use in a Cafe / Bistro with 14 tables, maximum of 20 staff , clerk logon via Dallas key and electronic journal on. Any recommendations as to initial memory allocation? I estimate needing no more than 200 PLU's, but some will have modifiers/condiments.

Don't want to get it wrong and discover I've got to start programming all over again!

Also - Is the DK port on the unit +12v or +24v? Is is normal to drive the drawer on these units directly from the base, or via an attached printer? Any recommendations for a compatible printer ?
