Connect Ethernet KP?

Have you used a straight through ethernet cable to the switch?

Yes. Used a patch cable not a cross over one. On the sps set ethernet port 1 to 192.168.0.20 and assigned it to a bixolon printer.
On the printer set ip as 192.168.0.20. Subnet mask to 255.255.255.0, gateway to 192.168.0.1 and left port at 9100.
Also on sps network setting left at off so terminals automatically connect and pc connection turned to off.
I notice on sps2000 you can assign the ip but the only place to assign port is for a pc connection.

If this doesn't work would anyone know where I can get a 10-15m serial cable?

Well Andy-the-Antagoniser,
thank you so much for your pearls of wisdom! I assume its beyond you capabilities to help with ethernet settings, as you didn't even know this was an option for a kitchen printer. Yes, make a cable, that has already been considered.
